Failing to do so can result in the spread of bacterial infections and viruses. Today we are going to review the importance of proper ice handling practices.

    Ice machines typically do not become infected by the ice itself, ice that becomes contaminated is usually a result of poor ice handling. Proper ice handling is the best way to prevent the spread of unwanted bacteria and viruses in your ice machine. To limit the possible spread of bacteria, it is important to make sure that all operators wash their hands regularly and before using the ice machine. Additionally, it is good practice to encourage staff members to follow a cleaning routine, this can be done by placing sanitizing stations near the machine with simple instructions on how to properly sanitize the machine before and after daily use.

    Another important rule of thumb to follow is to only retrieve ice using a sanitized ice scoop. This is especially important when operating a high-volume facility that involves serving hundreds of drinks. While it may seem easiest to scoop ice using the glass you are serving, this method will likely contaminate the entire ice bin with harmful bacteria. When staff members are done using the scoop, it is important that the scoop is placed back into a sanitary container outside of the bin. At the end of the evening, make sure to clean the scoop and the holder with a disinfectant solution, or using a commercial dishwasher.

    Cleaning, sanitizing, and disinfecting your ice machine on a daily basis will not only help you eliminate the spread of germs and viruses, but it also helps eliminate the spread of mold and other contaminants. It is recommended to clean the exterior of your ice machine and the interior of your ice bin on a weekly basis. Additionally, it is important to take note that ice machines are closely monitored by the FDA and if not maintained properly can result in health code violations.
