Have you ever worked with a cook or chef who could easily tell you which scoop or disher to use when reading a recipe? That often leaves foodservice newbies wondering how the can determine if a size 12 disher is better for a specific recipe versus a size 16 disher or even a size 10 disher so easily, where it’s difficult to see any difference in bowl size.

Disher sizing may appear random, but it really isn’t. The size of each disher, sometimes referred to as an ice cream scoop, is based on the number of level scoops it takes to fill a quart or 32 oz. container. Below is an easy-to-read chart that anyone can use to quickly identify which scoop or disher is the most appropriate size for their requirements.
