    What is a sheet pan used for?
    A sheet pan, baking tray, or baking sheet is commonly used to bake pastries, dinner rolls, treats, and flat products such as cookies, sheet cakes, and flatbreads. If your facility creates any sort of baked goods, a versatile sheet pan is a tool you need.

    Size Needed:
    The size of your oven, and the amount of storage space you have available can help you determine the perfect size of sheet pan you need. A full size sheet pan measures 18” x 26” and is the perfect pan for baking larger batches of cookies, pastries, and other treats. A half size sheet pan measures 13” x 18”, it is still spacious enough to bake plenty of treats, while offering you a more compact size for easier storage.

    Pan Gauge:
    When it comes to thickness, a lower gauge indicates a thicker pan. Higher gauged sheet pans are more economical but are not as durable as lower gauged pans.

    Pan Material:
    If even heat conduction at an affordable price is important to you, aluminum pans are ideal. Aluminum heats up quickly and cools down fast, which means your food will start cooking when it goes into the hot oven and stop cooking when it comes out, although it is not recommended to use with acidic foods as it might give them a slight metallic taste. Stainless steel is widely known to be a poor performer in the even heat conduction category, but the taste of acidic foods will not be affected.
