If someone asks you to grab a sheet pan, you immediately know what to fetch, but there’s actually quite a bit of variety in sheet pan sizes and styles. Commercial sheet pans, also referred to as bun pans, are used in a wide variety of cooking tasks and in ovens, steamers, on racks for storage and more. Because these pans are used for so many things, there are a variety of sizes and styles to them, which is why they are so versatile. Here are the assorted sizes you’ll find:

Full Size Sheet Pans – the commercial full sized sheet pan is 18” x 26” and for any home cooking enthusiasts that are shopping commercial restaurant supplies, it’s critical to know that this pan will not fit in a residential oven.

2/3 Sheet Pan – these sheet pans will fit one per residential oven shelf. They are 16” x 22” and the size you find in retail stores for consumers.

Half Size Sheet Pans – these pans are half the size of a full sized sheet pan at 13” x 18” and will fit two per shelf in a commercial oven or rack.

¼ Size Sheet Pan – these compact pans are 9-1/2” x 13” and fit four to a shelf in a commercial oven. They are also a good size for smaller countertop convection ovens used in cafes, catering operations or to supplement small batch baking and cooking.

1/8 Size Sheet Pan – the smallest of sheet pan sizes, the 1/8 Sheet Pan is 6-1/2” x 9-1/2”. This is a size that you would find in a commercial foodservice operation where they are utilized to prepare an individual serving of protein, individual baked items or even toasting small quantities of nuts or seeds.

Along with the various sized sheet pans, there are also sheet pan covers made to fit each individual size. These covers are great for storage and transport, protecting the contents that is on your sheet pan.
