Its 50 PSI (3.5 bar) steam-jacketed design provides consistent indirect heating across the kettle for controlled cooking, while the permanently filled jacket eliminates the need for routine venting or refilling. High-wattage electric heating is standard, and solid-state temperature and low-water safety controls help support consistent operation. The stainless steel kettle, exterior surfaces, and enclosed mixer bridge are built for demanding foodservice environments. A 2-inch tangent draw-off valve and hot-and-cold water faucet are included for practical batch handling and cleanup.

    For mixing-intensive applications, the MKEL80T combines a 3 HP hydraulic-powered scraper/agitator system with bridge lift functionality. The scraper operates from 0 to 40 RPM, with a variable scraper-to-agitator ratio from 1:1 to 8:1 to accommodate different product consistencies and mixing requirements. Bayonet-mounted agitator and scraper components support convenient removal, while built-in safety features prevent high-speed starts and stop mixing when the bridge is lifted. The manual tilt mechanism provides a controlled way to discharge prepared product from the 80-gallon kettle.
