The Cleveland MKDL125T Sweep/Fold Direct Steam Tilting Mixer Kettle is a 125-gallon commercial cook-chill mixer kettle designed for high-volume batch cooking, mixing, and controlled product handling. Its 2/3 steam-jacketed kettle uses direct steam for efficient heating, while the hydraulic-powered Sweep/Fold agitator, scraper, and bridge lift provide controlled mixing across large production batches. The 316 stainless steel kettle liner is suited for processing high-acid products, while the stainless steel consoles enclose the plumbing, electrical components, and hydraulics for a protected equipment configuration. A variable scraper speed control allows operators to adjust mixing performance, with a variable scraper-to-agitator ratio for different product requirements.
Built for demanding foodservice and cook-chill production environments, the Cleveland MKDL125T features a manual tilt mechanism with roller bearings and a self-locking worm and segment gear for controlled product discharge. Removable scraper blades contact the jacketed surface to support thorough mixing, while bayonet-mounted agitator and scraper components allow convenient removal. A solid-state temperature controller with digital readout and time/temperature chart recorder supports batch monitoring and documentation. The kettle also includes an automatic water meter, hot and cold water faucet, automatic water cooling, removable flow diverter, two-piece lift-off cover, and an air-operated 3-inch flush piston discharge valve with variable control. The 125-gallon model has a 35 psi steam jacket rating.
