The Cleveland SteamCraft Ultra 3 21-CET-8 is a one-compartment counter-type pressureless convection steamer with an electric steam generator, designed for commercial foodservice applications requiring consistent steam cooking in a compact format. Its PowerPak electric steam generator features a stainless steel heating element and a 3.5-gallon reservoir, while the fully insulated rear-mounted generator supports fast steam production. The unit accommodates up to three 12" x 20" x 2 1/2" deep cafeteria pans, making it suitable for batch preparation of a variety of food products. An instant steam standby mode keeps the generator at steaming temperature for rapid cooking startup.
Heavy-duty 14-gauge stainless steel construction is used for the compartment door, cooking cavity, and steam generator. The exclusive steam distribution system uses brass steam jets to produce high-velocity convection steam without fans, while coved cooking compartment corners promote even distribution and simplify cleaning. A cold water condenser helps maintain dry steam, and removable stainless steel slide racks provide convenient pan support. The automatic remote probe water-level control is positioned separately from the generator for easy access. Additional features include an automatic generator drain with Water Jet spray rinse cleaning, an external generator cleaning port, a generator cleaning indicator light, and a 60-minute electro-mechanical timer with audible end-of-cycle signal.
