Cleveland 21CET8 Steamcraft Ultra 3 Steamer
The Cleveland 21CET8 Steamcraft Ultra 3 Steamer is a commercial counter-type, pressureless convection steamer designed for efficient steam cooking in professional foodservice environments. This one-compartment steamer features an 8 kW electric steam generator and heavy-duty 14-gauge stainless steel construction for the compartment door, cooking cavity, and generator. Its exclusive brass steam jets produce high-velocity convection steam without fans, while the coved-corner cooking compartment promotes even heat distribution and simplifies cleaning. A cold water condenser helps maintain dry steam, and removable stainless steel slide racks provide convenient access to the cooking compartment.
The rear-mounted, insulated PowerPak electric steam generator includes a 3.5-gallon reservoir, stainless steel Fire Bar heating element, and automatic remote probe water-level control. Automatic generator blowdown incorporates a Water Jet spray rinse drain cleaning cycle to help keep the drain clear, while the external generator cleaning port provides convenient access for maintenance. The 60-minute electro-mechanical timer includes an audible completion signal, and Stand By Mode maintains the generator at steaming temperature for quick cooking starts. The steamer accommodates up to three 12" x 20" x 2 1/2" deep cafeteria pans. Its cool-to-the-touch two-piece door features a reversible gasket and stainless steel slam/latch mechanism. The compartment door is left-hinged with controls positioned on the right.
