The Blodgett ZEPH-200-E DBL electric convection oven is designed for high-volume commercial kitchens that require consistent baking performance, reliable temperature control, and durable construction. Built with a double-deck configuration, this full-size bakery depth convection oven helps operations increase production capacity without increasing floor space—ideal for restaurants, bakeries, cafeterias, and institutional foodservice environments.
Each oven compartment is powered by three tubular electric heaters and a ½ HP two-speed convection fan, circulating heated air evenly throughout the baking chamber to reduce hot spots and improve cooking consistency. This airflow system helps staff maintain product quality across multiple racks while reducing the need for pan rotation during busy service periods.
The extra-depth baking compartment accommodates five full-size 18" x 26" sheet pans either left-to-right or front-to-back, allowing operators to bake larger batches efficiently. A solid-state thermostat with a 200°F to 500°F temperature range provides precise temperature control, while the recessed control panel with separate thermostat and timer dials simplifies operation for kitchen staff.
Durable construction includes a stainless steel exterior, dual-pane thermal glass doors for product visibility, and a porcelainized interior liner with coved corners that simplifies cleaning and sanitation. Five chrome-plated racks with multiple rack positions provide flexibility for baking different products simultaneously.
