Induction cooking heats a cooking vessel with induction heating, instead of infrared radiation from either electrical wires or with the use of a traditional gas. An induction cooker transfers electrical energy by induction from a coil of wire, to a metal vessel that must be made ferromagnetic metal, such as cast iron, or stainless steel. The coil may be mounted under the cooking surface, where a large alternating current is passed through it. This current creates a dynamic magnetic field. When an electrically conductive pot is brought close to the cooking surface, this magnetic field induces eddy currents in the pot that flow through the electrical resistance of the pot to produce heat. This heat in turn heats the contents of the pot, cooking the food. Induction cooktops increase cooking efficiency, control, and safety.
