Bain Marie Pots

Bain Marie pots are kitchen equipment that come in a variety of sizes, shapes, and types, but they are traditionally wide and cylindrical, and usually a metal container made of three of four basic parts: a handle, an outer or lower container that holds the working liquid, an inner or upper smaller container that first inside the outer one, and which holds the material to be heated or cooked, and sometimes, a base underneath. The heat source is located under the outer container. The inner container is typically immersed about halfway into the working liquid. They are essentially hot water baths for the food you are preparing, as they prevent direct contact with the heat source, which produces a more even and efficient heater for many recipes. For example, chocolate can be melted in a Bain Marie pot to avoid splitting and caking onto the pot. In addition, cheesecake is often baked in a Bain Marie pot to prevent to top from cracking in the center.
